Fat side up with Anything.

As the fat cooks it melts. If you put the fat side down it just drains away leaving hte meat dry and unflavored.

When you cook the meat fat side up the fat melts down into the meat giving it flavor and mouisture.

It depends on how you are going to cook it. If in an oven-fat side up. If in a crock pot--fat side down. IT all depends upon how close the meat is to the source of the heat--neither way will affect the taste of the pot roast.

Fat side up, that way a lot of it will cook off and moisten and flavor the roast as it cooks

Both! Cook it fat side down and then finish off fat side up!

I put it in a slow cooker for 6 hours. It don't matter
