Why are there eggs in recipes ?!


Question: Why are there eggs in recipes ?
I am trying to make pancakes, cinamon rolls , etc and they call for eggs. I am curious if i can leave them out or use something else in its place. I also work as a personal chef and I am starting to get alot of calls from Vegans. I understand i could get away without eggs in breads but probably not sauces.

when you add eggs to your food recipes there's a bonding in between the ingredients that's makes it stay as hole and also makes thicker materials but it also adds shine to the things you cook a good example would be the salt pretzel
