Help replacing egg and cake flour in recipe?!


Question: Help replacing egg and cake flour in recipe?
My father's birthday is coming up, and I've selected this coconut cake recipe to make:

However, he cannot eat eggs or flour. Is there a substitute I can use to replace those ingredients without compromising the structure or flavor of the cake? Please provide substitutes that work for you- I don't want to take any chances!

You need to find a recipe that is already written using alternate flour and no eggs.
Baking is a chemical reaction and baking recipes are often called formulas because each ingredient p[lays a part in the final outcome. It is NEVER a good idea to randomly substitute ingredients with things that are totally different in nature. you will not be happy with the results.

1 whole egg = 2 tbsp water and 1 tbsp oil and 2 tsp baking powder.

Using Flax Seed:
For each egg needed, place in blender:
1 heaping tablespoon of whole organic flax seed, blend until it becomes a fine meal. Add 1/4 cup cold water blend 2-3 minutes until thickened and has the consistency of eggs. Each 1/4 cup of Flax seed mixture will replace one egg in baking

For flour- go to kosher section for flour replacements, rice flour etc.



There are no good substitutions for those ingredients where you still end up with a good outcome. Flour and eggs are both "key" ingredients. I would suggest a pie or a "cobbler" type of desert like a peach or apple filling baked with an oatmeal or nut flour topping /crust. Those type of recipes are way more flexible. Good Luck!



Can your dad eat egg substitutes? here is a link which tells about what to use for egg substitutes. As far as the flour goes, check your grocery or health food store for gluten free flours. I usually use rice flour as a wheat flour substitute but I have not tried it on a cake. Rice flour tends to absorb more liquid than wheat flour so the cake may be a little dry.
