Question: Do you have to use vanilla extract when making a cheesecake?
Or can you just omit it.
Will it affect it a lot?

Every recipe for cheesecake I have made calls for vanilla extract, and while it isn't necessary to use, you don't have to use it based on taste preferences or other reasons (such as not having vanilla extract). I have never not used vanilla extract in a cheesecake, but it will most likely still taste decent if you choose to omit it.

However, I find that it does contribute to the overall flavor of the cheesecake, considering how much vanilla extract is generally used in one recipe.
