Any recipes that use honey roasted peanuts?!


Question: Any recipes that use honey roasted peanuts?
I have loads of honey roasted peanuts left over from Christmas, but don't fancy eating them all myself.
Can I make peanut brittle?
Blend them to make something else?
Anyone got any great ideas?

Peanut Brittle


Ingredients

* 1 cup white sugar
* 1/2 cup light corn syrup
* 1/4 teaspoon salt
* 1/4 cup water
* 1 cup peanuts
* 2 tablespoons butter, softened
* 1 teaspoon baking soda

1.Grease a large cookie sheet. Set aside
2.In a heavy 2 quart saucepan, over medium heat, bring to a boil sugar, corn syrup, salt, and water. Stir until sugar is dissolved. Stir in peanuts. Set candy thermometer in place, and continue cooking. Stir frequently until temperature reaches 300 degrees F (150 degrees C), or until a small amount of mixture dropped into very cold water separates into hard and brittle threads.
3.Remove from heat; immediately stir in butter and baking soda; pour at once onto cookie sheet. With 2 forks, lift and pull peanut mixture into rectangle about 14x12 inches; cool. Snap candy into pieces.

I had exactly the same problem with leftover party nuts. I'm a chef and I make this all the time and used honey roasted with no problems whatsoever. You'll want to serve this dish with some plain boiled rice.

If you like curries then you might want to try this little easy number. It's a keeper.

Chicken Satay Sticks with Peanut Sauce

125g roasted peanuts
6 cloves garlic, roasted in their skins?
2 shallots, roasted in their skins?
1 whole fresh lemon grass, diced
?Small piece of galangal, diced?
small handful of fresh coriander, diced
2 t coriander seeds, toasted?
? t cumin seeds, toasted
?2-3 red chillies?
? t ground nutmeg
?? t cinnamon
?? t ground mace?
1 t shrimp paste

Finishing the satay:

?1 can coconut milk?
2 T fish sauce
?1 T sugar
?1 T wet tamarind

Making the satay:
1 Use pestle & mortar on peanuts, make as fine as possible
2 Roast garlic and shallots in their skins?
3 Toast coriander and cumin seeds?
4 Use pestle & mortar on list of paste ingredients, set aside
?5 Heat ? of coconut milk in a frying pan and cook off paste of a frying pan heat up ? of the coconut milk, and add paste?
6 Add remaining coconut milk
?7 Add fish sauce, sugar and tamarind to taste?
8 Simmer, transfer to a serving dish, serve at room temperature or serve as a curry with rice and side of Asian salad


Chicken breasts
Sunflower oil
Salt

Cooking chicken breasts so that they are perfect and tender:
1 Preheat oven to 220°c?
2 Coat raw chicken in a little sunflower oil and sea salt
?3 Heat frying pan then place chicken skin side down into pan?
4 Seal breast for 2mins until lightly golden, flip for 2mins
?5 Place pan into hot oven skin side down for 10mins (use timer)
6 Probe and achieve 75°c?
7 Remove from oven, cover and rest 5mins before carving
8 Cut into strips or medallions or skewer onto sticks

Serve the hot peanut satay sauce in a little dish with slices of chicken and rice on the side.

Make a meat and vegetable stir fry and then add the peanuts. Serve over rice.
