What kind of frosting/icing/topping do you think would go well with this cake?!
Yes, as in the sweet kind you put in mince pies. I have lots of spare from christmas and need to use it up.
I was thinking a vanilla buttercream with choccie sprinkles might be nice...

I say a caramel cream frosting... yum.
* 2 tablespoons white sugar
* 1 cup white sugar
* 1/2 cup butter
* 1/2 cup heavy whipping cream
Directions
1. Place 2 tablespoons sugar in a saucepan. Cook over medium heat until sugar is dissolved and becomes golden brown in color. Set aside.
2. Combine remaining 1 cup sugar, butter, and cream in a medium saucepan. Cook over medium heat, stirring constantly, until mixture comes to a boil. Stir in caramelized sugar, and return to a boil. Cook for 2 minutes, stirring constantly. Remove from heat. Beat until frosting has a good spreading consistency.

u could always save the mincemeat for next christmas, chuck it in the freezer and bring it out in november, itll be beautiful! when i did my bakers apprenticeship we made a massive lot of mincemeat up and didnt use it all, chucked it in the freezer and were using it for 3 years! made the most beautiful pies! it will be very strongly fermented by then but that improves the flavour. honestly when we opened those buckets, u could smell the booze on the street!
If this is a spice cake with fruit in it, I'd go with a glaze of some kind, maybe lemon flavored or vanilla or something that picks up or enhances the flavors of the cake. The cake will be heavy enough without a heavy frosting on top.
Orange Cream Cheese Icing:
250g cream cheese
?125g icing sugar?
1 teaspoon orange juice?
1 teaspoon orange zest
1 Cream ingredients together and smooth onto cooled cake

Vanilla buttercream sounds great. Also lemon cream cheese would be good or maybe a ginger glaze with little bits of preserved ginger sprinkled on top.
