Question: How to preserve the cabbage coleslaw?
Answers:

Two types of Coleslaw
Creamy or Vinegar
Here is a recipe with variations
1 small cabbage
4 carrots
1/2 green pepper
1 clove garlic
2 tbsp vinegar
2/3 cup Kraft Miracle Whip salad Dressing
2-3 tbsp sugar
1 tsp salt
method
coarsely grate cabbage & carrot
grate inside of green pepper and trow away skin.
Add remaining ingredients and mix thoroughly.
Refrigerate
Note: for tangier (vinegar coleslaw)eliminate salad dressing and increase vinegar to 1/3 cup and add 3 tbsp oil.
I would like to add my comment to answer your question, This coleslaw made either creamy or vinegar type will last if refrigerated several weeks.

If you use the vinaigrette like dressing, it becomes pickled, which is a type of preservative. Sauerkraut is an example. If you can it properly it will last a long time.
However, it's cabbage and cabbage is cheap. Can't you make more every few days?
