Porcupine meatballs over rice?!


Question: Porcupine meatballs over rice?
This is my first time making porcupine meatballs (meatballs mixed with rice and cooked in tomato sauce:) I was told to serve them over mash potatoes or noodles but only have rice. Would they still be good? I was worried the tomato sauce would not be good over rice, or it would just be too much rice! Please help. Thanks

Tomato sauce is good over rice and you can certainly use it instead of potatoes or noodles.Don't heap the plate with rice just put the meatballs on top of the rice and then spoon the sauce on top of all. Parmesan cheese sprinkled on top is also good if you have it ;)



We never serve them over anything.
You already have the meat and carb(rice).
To make a complete meal all you need is a vegetable and dessert.
I have had them at other folks homes served with potato of various kinds on the side, like escalloped or roasted potatos.
If you want to serve more rice, why not. you serve what you have.



I agree with bubbles - rice would be fine, but the rice is already in there! Save your rice and just have a salad and maybe some garlic bread. You can use the bread to soak up the last bit of that sauce!
