What can i use as an alternative to wholemeal self-raising flour?!


Question: What can i use as an alternative to wholemeal self-raising flour?
Okay so I have a recipe for a mincemeat cake which calls for wholemeal self-raising flour which I cannot find in my local shops and do not have time to source.

So my question is... Can I just use plain self-raising flour or perhaps wholemeal flour with baking powder? Would this effect the taste, cooking time or amount of flour needed?

Answers:

You can make your flour self-rising by using this mixture proportionally to your recipe:

1 cup (140 grams) similar grade (all purpose) flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt

So for 12 oz flour, add half again as much:

12 oz whole meal flour
2 1/4 tsp baking powder
3/8 tsp salt

nothing else should be affected, though, if you use all purpose flour, the mixture will be a little lighter.
