A classic Greek salad tastes amazing with grilled chicken. And it doesn′t hurt that it is a healthy option!:)

If you're looking for something other than the "usual"...try this good salad:

Mango and Red Cabbage Slaw

1 head red cabbage, halved and very finely shredded (about 8 cups)
1 teaspoon salt
1 large or 2 small ripe mangoes, peeled, fruit sliced from the pit, and diced
1 tablespoon chopped fresh cilantro leaves
1/4 cup lime juice (about 2 limes)
1 tablespoon cider vinegar
1 tablespoon granulated sugar

Place the cabbage in a large bowl and toss it with the salt, using your hands to press down firmly on the cabbage to encourage the cabbage to release some of its moisture and better absorb the salt. Transfer the cabbage to a colander and let it sit for 20 minutes to drain.

Using paper towels or a kitchen towel, squeeze as much liquid as possible from the cabbage and place it in a clean, large bowl. Toss with the mangoes, cilantro, lime juice, vinegar and sugar. Let the coleslaw sit at room temperature for 15 minutes before serving.

Yield: 4 servings
Prep Time: 20 minutes
Inactive Prep Time: 35 minutes

RECIPE..here's another way to serve that corn on the cob: First, peel back the husk (don't pull off) and remove all the "silk" threads..then tie the husk back with kitchen twine (like you're making a pony tail ;)....place into boiling water (add salt and some sugar to make "sweet corn"...boil 7 min or so...have husks sticking out of pot when cooking)....serve with slice of this butter (recipe here>>>) placed on top of the corn ear>>>>

Hot Corn with Chimichurri Butter

2 tablespoons sherry vinegar
1 tablespoon fresh lemon juice
3/4 cup chopped flat leaf parsley
3 tablespoons chopped fresh oregano leaves
2 garlic cloves, roughly chopped
Pinch red pepper flakes (optional)
2 sticks (1 cup) unsalted butter, at room temperature
Salt
6 ears corn, husked

(Grated Cotija cheese, for serving, optional
Lime wedges, for serving, optional)

Place the vinegar, lemon juice, parsley, oregano, garlic and red pepper flakes in a food processor and pulse until finely chopped. Transfer the mixture to a piece of cheesecloth or a kitchen towel and wring out the excess liquid. Place the mixture in a small bowl and stir in the butter.

Transfer the chimichurri butter to a sheet of plastic wrap and shape it into a log. Wrap in plastic wrap and refrigerate until it has hardened.

Meanwhile, bring large pot of salted water to a boil. Add the corn and boil until it is tender, about 5 to 7 minutes. Drain and transfer to a serving platter. Place a disk of chimichurri butter on each ear of corn and (serve sprinkled with Cotija cheese and a lime wedge on the side....optional).

Yield: 6 servings

Cook Time: 5 to 7 minutes
Inactive Prep Time: 1 hour
Ease of preparation: easy



I think that baked beans, potato salad, coleslaw and corn on the cob all go well with BBQ chicken.

Have thrown a few parties in the summer with the above dishes. Always a hit.



i usually eat bbq chkn with...potatoe salad,beans and a dinner roll or mashed potatoes,corn on tha cob and corn bead...depends how im feeling..
