Sauté onions and mushrooms (I like to use dried porcinis and rehydrate them in whiskey), then add the quinoa along with a bit of salt, and stir a little bit, just until it starts to get translucent. Add twice as much water as the quinoa - for every one cup of quinoa, use two cups of water - and let it come to a boil uncovered. As soon as it does, reduce the heat to a simmer, cover, and let it simmer until the water is absorbed (about 15 to 20 minutes. You don't have to do the onions and mushrooms if you don't want to, or you can add other things - celery, peppers, spinach all work pretty well.
I personally find it disagreeable unless it's mixed into a stuffing or with other starches like couscous. I would cook it in chicken bouillon/stock with a lot of herbs then mix in steamed vegetables or wild rice or both.
as bread.
Substitute half the flour with quinoa and add 1 Tbl. cornmeal per cup of flour/quinoa.
quinoa + water, heat until done.
