Question: Eggs for supper ~ Any suggestions?
What is a good substantial egg dish I can serve for the evening meal tonight?
I don't want eggs prepared in the usual breakfasty sort-of way. No scrambled, boiled, fried, etc.

Besides egg I have cheese, salsa, canned tomatoes & various spices, & maybe some more unknowns lurking in the cupboard.

Can you suggest a substantially filling egg dish?

Welsh Rarebit with Eggs
Make roux in a pan on the stove with 2 Tbl butter and 2 Tbl flour
add 1/2 tea salt, 1/2 cup milk (or evaporated milk)
stir in 1 lb cheddar cheese (shredded)
blend in 1 cup Guinness or other heavy stout.
set sauce aside ...

poach eggs (or fry over low heat)

Serve the eggs on toast with the crusts cut off and the sauce over the top.
Serve extra Guinness to drink.

You might also consider making "Strammin Max" (or strammer max) a popular German pub food (and midnight snack after the pub) and said to also be an aphrodisiac.

I've made it with lieberkase and also Schwarzw?lder ham ... excellent both ways.
Serve it with a good imported German Beer.



Mushroom frittata

Ingredients
1 tablespoon olive oil
1 small red potato
2 cups diced mushrooms [oyster mushrooms are particularly good]
coarse salt
freshly ground black pepper
4 eggs
1/4 teaspoon crushed, dried thyme
2 ounces grated Fontina cheese

Method
Heat oven to 350
Heat oil in a 9-inch nonstick skillet. Scrub potato and cut into 1/4-inch thick slices. Peeling isn’t necessary. Sauté potato slices and mushrooms over medium-high heat, turning them occasionally, until potato slices are tender, about 10 minutes. Season with salt and pepper.

Beat together eggs, thyme, and salt and pepper to taste. Pour over potatoes and cook over medium high heat until eggs are moist but set 4 to 5 minutes.

Sprinkle cheese over eggs. Bake until cheese melts 3 to 5 minutes.

Cut into squares and serve immediately.



Make a traditional Spanish Tortilla!

If you have about 2 lbs of potatoes on hand, preferably russet or you could use yukon golds but I wouldn't use red potatoes, peel them and cut into about a 1/4-inch dice. In a large saute pan heat about 1/2 olive oil over medium heat and cook the potatoes for about 20 minutes until they are completely cooked through. Remove the potatoes keep any residual oil in the pan. Add about 2 onions sliced thinly and cook until they are golden brown. Remove the onions to the potatoes and cool to room temperature. Whisk 6 eggs together with salt and pepper and then fold in the cooled vegetables. Pour back into the pan and cook for about 8-10 minutes until the sides begin to set and a brown crust is formed. Run a spatula around the edges and turn out onto a plate. Slide the tortilla back into the pan and cook on the other side for about 4 more minutes. Serve on a platter cut into wedges and enjoy!

Omelet with most of the ingredients you list - although you did specify not tradition breakfast
'Breakfast Casserole' - which usually uses bread or potato

Since we generally associate eggs with breakfast, it is difficult to get away from 'breadfasty' so with out other ingredients to 'hide' the eggs you may be stuck.

French style omelet.

6 eggs
1 T water or cream
1 to 2 T grated parmesan
dash garlic powder
salt & pepper to taste.

in a 12" pan, skillet about 1.5T butter. Put all ingredients in a large bowl and using a whisk, mix them well. Pour into skillet.

Cook gently lifting the edges to allow the liquid to run underneath. When the top is jelly firm use just about anything to stuff it - but only on one half. My favourite is sharp grated cheddar and mushrooms. Fold the omelet to cover the stuffing and serve immediately.

Enjoy.



I was going to suggest a frittata -- I love them and they work really well for dinner. It's like a big thick omelette. I see someone else has a put up a recipe, but I'll suggest some additional ingredients: mushrooms, sausage/ham, cheese, spinich, garlic, peppers, onions, broccoli, asparagus, tomatoes... etc. You can be creative!

I also take a thinly sliced piece of ham or turkey lunch meat. Place in a cupcake pan. Add what ever left over veggies I have, a sprinkle of cheese and even if I have a little more ham, turkey etc...

Place in each lunch meat lined cup, then whisk up some eggs with a little salt and pepper, and a spalsh of milk. Pour eggs into each cup and bae at 350 for about 15-20 min.


Make egg sandwcihes. Get some yummy bread or rolls. Add spianch, tomatoes, good cheese, meat of coice if you wish.

Brekfats burritos

My mom used t nmake a dish when wee were little. I never knew the name but I have seen it since. I thik it is called creamed eggs and toast.

Hard boil eggs. Cool, peel and slice. Whisk the yolks with a little milk, salt and pepper. This iwll thicken a bit, add the whites. Serve over buttered toast.

When I was younger we would have eggs (scrambled or sunny side up) served over white rice. I still eat it to this day. Put ketchup on mine. Haha. (:

Bacon Quiche

Ingredients:
1/4 cup melted butter
1-1/2 cup milk
1 teaspoon salt
dash pepper
3 eggs
1/2 cup Bisquick baking mix
1 cup Swiss cheese, shredded
1/2 cup bacon (about 6 to 7 slices pre-cooked), cut or broken into small pieces.

Mix first 5 ingredients together and beat well (wire whisk works well). Stir in Bisquick. Pour into 9-inch (deep) cake pan. Put meat and cheese on top of mixture (do not mix). Bake at 350 degrees for 45 minutes.

Best when made the night before and served by heating in microwave with plastic wrap covering.


Broccoli/Cheese Quiche

Ingredients
Pastry for 10-inch single pie crust
1-1/2 cups chopped broccoli
1-1/2 cups grated cheddar cheese
4 eggs
1-1/2 cups cream
1/4 teaspoon salt
Dash of pepper
Dash of nutmeg

Arrange broccoli and cheese in pastry-lined pan. Beat together eggs, cream, and spices in bowl. Pour the custard mixture over cheese and broccoli. Place in preheated over at 375 degrees 35 to 40 minutes or until top is golden brown and knife inserted 1 inch from edge comes out clean.

Yield: 8 main dish servings.

Eggs Rancheros

Ingredients:
One 8-ounce can tomato sauce
1 teaspoon chili powder
1/4 teaspoon cumin
8 eggs 1/4 teaspoon pepper
1/4 teaspoon paprika
1 cup (4 oz.) shredded cheddar cheese
4 tostado shells
Sour cream
Jalapeno slices

Combine first tomato sauce, chili powder, and cumin in a lightly greased 9" pie plate. Break eggs evenly over sauce in dish and sprinkle with pepper and paprika. Cover and bake at 350 degrees for 15-20 minutes.

Sprinkle with cheese and bake an additional 5 minutes. Spoon eggs into tostado shells and plop with sour cream and jalapeno.
