Help with healthy recipes please?!

In the past year, my mom and I started a food blog together. As I began to cook more, I also (surprisingly!) began to eat a lot healthier and feel a lot better. So, I would say: try to enjoy your food more, both the cooking and the eating of it.
Here are a couple of healthy ideas from our blog that you may want to try:
Beef Goulash:
A meat dish with lots of peppers and tomatoes, satisfying, but also good for you.

Borsch:
A meat and beets soup. It's not exactly easy, but very very good and lasts a long time in the fridge. For an easier version, you can just start with a store-bought broth and skip boiling the meat.

saute some veggies with chicken, thats always good. can also be done with beef. chile peppers, hot or not hot whichever you prefer, garlic, onions. use olive oil and don't use a whole lot of salt but do use spices. expiriment and see what tastes good.
Even some minor adjustments can improve your diet a lot. Avoid fried foods. Keep starches to a minimum. Keep fat to a minimum. Use olive oil instead of others. Use less salt and more garlic. Use leaner meats and keep portions on a human scale.
