A countertop convection oven.
Let me add another item that has been one of the most useful that I own, it is what some people would call a "toaster oven" though it is not.
Mine is a "Toastmaster Quick Cooker" which is a type of small convection oven (it heats with hot air that is blown by a fan).
This is a far *better* choice than any standard toaster oven (which personally, I would not buy) because the convection feature allows foods to cook as if they were in a full size oven.
The Quick Cooker can be bought for between $50 and $70 new and for very cheaply used. I actually own two of them ... both used but in very good condition - one for $15 (garage sale) and one for $10 (thrift store). This is an oven that cooks very specific kinds of food extremely conveniently. Those items are meat up to 2" thick, chicken up to 1" thick, pizza, fish, sandwiches, nachos and other items of this sort. It goes up to approx 525 degrees (I tested it.)
This is also great for saving electricity and for not heating up the kitchen in summer when you want to cook something in it (verses a full sized oven).
If you go to ebay (or craigslist) and search for "convection oven" you can find other brands for similar prices.
It seems that you are pretty serious cooks, so I would add a good set of knives and spices that you like. The easiest way I have found to do this list is to start in one room of your house and go from room to room and make a list of all that is needed.
