well what is cake flour? CAN I USE ALL PURPOSE OR CONFECTIONERS INSTEAD?!

Cake flour is very finely milled flour that has very little protein in it to avoid the gluten setting up and making your baked goods tough.
You can add cornstarch to AP (all purpose) flour as a substitute. 2 Tbl corn starch to 1 cup AP flour.



No need to buy specialized flour, like cake flour, when it's easy to make your own.

Method
For every 3/4 cup of sifted all–purpose flour, add 2 tablespoons cornstarch.


Baker's Tip: Store your flour in a metal cansiter with a tight - fitting lid. Use a permanent marker to write the ratio of flour to cornstarch on the inside of the lid so you will always have it with the flour.
