Question: Tenderising meat using lemon juice.?
Hi!, I'm just wondering how much lemon juice & olive oil should I use to tenerdise beef, does anyone know the correct ratio? Is it like 1 cup olive oil to 1/2 cup lemon juice...

Because of this recession, I have to buy cheaper cuts of steak..and diced beef, and I want to make it as pleasant as possible. :-)

Be careful using lemon juice, The acids in it will also cook the meat and make it tough when you go to cook it again. If u can find a cheap red wine, beer, soy sauce, the tannins in them will tenderize the meat with out cooking it. Also a simple pounding of the beef will tenderize it too. I'm a chef, and buying the cheaper cuts of meat can be better in the long run, less money and more flavor. Also try braising ur meat slowly will def tenderize it,



i think you should use more lemon juice then oil because oil is fattening and i think it is 1 cup of lemon juice because there is more flavour and also 1/2 a cup of olive oil because it causes high cholesterol

i would suggest to put equal ratios, like 1 tablespoon of each

or you could also a mallet or even use a rolling pin to tenderise beforehand
