How to cook a 2lb beef pot roast?!


Question: How to cook a 2lb beef pot roast?
I want to cook a 2lb beef pot roast in a crock pot to medium rare. How long does it need to cook? I'm assuming on low, but just an idea of time would be nice! Thanks!

If you want the roast to be medium rare then the last thing is to put it in the crock pot...

It is crucial that you allow the roast to come to room temperature to ensure even-cooking. This means leaving it out for up to two full hours right before roasting.

* Preheat your oven to 450 degrees.

* Use a paper towel to pat the roast dry.

* Rub butter on the cut ends of the roast.

* Create a seasoning rub or paste with ingredients such as pepper, coarse salt, garlic powder, and onion powder. Make a series of ? inch deep slits all over the top of the roast as well as the sides. Rub your seasonings all over the roast, covering all exposed meat.

Place the roast in a heavy metal roasting pan, bone-side down.

No matter what size roast you have, you will start it in a pre-heated 450 degree oven for 15 minutes then reduce the temperature to 325 degrees for the balance of cooking time. Cooking times will vary depending on size of the roast and desired level of doneness. The following chart gives approximate times for to reach "rare" at various sizes..I would cook at least 1 to 1 1/2 hours...

Unless it is an excellent cut of beef you won't want it medium rare. I don't think the crock pot is the way to cook it if it is a good cut. It won't take very long in the oven...that is the way to go.



Sear it on the stove top first, on all sides, then I would cook it on low in liquid for at least 8 hours. Some croc pots are faster than others, so check on it periodically.
