I would saute the ground beef with onion, garlic & spinach, fill the flour tortillas with this mixture and garnish with chopped tomato, cucumber & tzatziki. Voila! Greek Taco!
I think you have most of the key ingredients. DEFINITELY Nix the cabbage carrots and Tzatziki -- Wrong combination of culture and flavors. Like mixing Jello with Lasagna.
I would definitely recommend making a taco salad, especially if the spinach greens are fresh. The darker greens are much healthier and more flavor.
Dice the onions and 2 cloves of garlic and saute them with the raasted red pepper. Add the cumin, salt and chili flakes to the ground beef and then cook the above garlic and onions and red pepper so the flavors mix.
Crumble the taco shells first and then add the fresh veggies, tomato, cucumber, and black beans and corn.
**Keep the warm ground beef mixture separate. and it will stay much fresher and not make the cool vegetables soggy and much easier to re-heat it. It also looks very nice to see the layers of color in a huge glass bowl. with tomatoes on top.
Chop one half of an onion, and as many garlic cloves as you like. Brown 1 lb ground beef in a little oil, adding about 1/2 tsp ground cumin, and 1/2 tsp red chili flakes (more or less to taste), along with salt and pepper to taste. If you need the filling to go further, I would add the can of corn and/or the can of black beans at this point (drained). Chop up the tomato, the rest of the onion, some more garlic, and the roasted red pepper to make a fresh salsa. Add some lemon or lime juice, or a touch of vinegar if you have some, and add salt to taste. Shred the cabbage. Prepare the nacho cheese sauce. Spoon some of the filling into your hard shells, top with some shredded cabbage, some of your fresh salsa, and some of the nacho cheese sauce, and enjoy!
Saute ground beef adding a can of black beans, and a can of corn. add chili flakes, cumin, garlic and sauteed onion. Use the tomatoes to make a salsa with some onion, and cumin and cucumber.
Make a cole slaw with the cabbage and carrots,
Make Nacho Cheese mix and use it as well as the salsa to top your hardshell tacos that are going to be filled with the cooked meat, beans and corn.
Serve with the tzatziki.
Or make beef, bean and veggie burritoes or quesadillas.
Fresh spinach, carrots, cucumber, tomato, roasted red pepper and onion can equal one salad. Oil (from pepper jar), vinegar, chopped garlic can equal dressing. Broken-up hardshell tacos can be tortilla chips if you want taco salad.
Otherwise, use broken taco shells with nacho cheese mix, ground beef, and onions for nachos.
all of it!!!! take the hardshells and break them in half use a casserole dish and put half the shells on the bottom and then dump a mixture of all the stuff (pre cooked and sauteed) into the dish top with the other half of the shells and then pour the cheese mix over the top...... creative tacos!!!!
