This is horribly simple! Promise........
Whether you are using chicken tenders or larger pieces of chicken, you would prepare this the same way - just cook a little longer for larger pieces. You will still want to slice them in strips across the grain of the meat for serving.
Marinate your chicken in a mixture of some olive oil, garlic, cumin, chili powder, onion powder, salt and pepper. If you like it hotter, add some cayenne or some tabasco. Marinate it as long as you want. When you are ready to cook, slice some onions and some green peppers and tomatoes (if you want the tomatoes), get a cast iron skillet as hot as you can on your stove. This is important...don't crowd your pan as you cook the meat or you are just steaming it. Using tongs, cook the meat and as it is finished, remove to a plate. End up with the veggies, then mix everything together. Turn off the heat and put everything back in the pan. Serve with tortillas and guac and sour cream (yucch, but you might like sour cream) and chopped onions. (You can heat the tortillas wrapped in a clean kitchen towel in the microwave or you can heat them one at a time on the burner of your stove - delicious, but that takes a while.)
Enjoy!
(Thanks, nocturnal, for reminding me - serve with lime wedges. Your recipe is very different from what I am used to, but it sounds great.)
Made a couple of fajitas in my Texan-New Mexican life.
I also have the Guac, chili con queso and pica reciept on the site which will enhance you fajitas. Check em' out....................
