How to make Rice O Roni not slimy?!


Question: How to make Rice O Roni not slimy?
I follow the directions on the back of the box to a T. No matter what flavor I pick, it always turns out slimy.. But when other people make it, it doesn't. What can I do/not do to make my rice o roni not slimy?

Try omitting or using less butter or oil. If the package has vermicelli then it is going to be mushy no matter what you do.



Are you mixing it while it cooks? Do not MIX rice when it is cooking after you have added the water or broth or you make the starches come out and this will make a slimy, gooey rice mess! Also, if it calls for you to toast the rice and 'roni, are you making sure it all gets nice and golden brown? This will help hold some of the starches in. I have a feeling that overmixing is your problem, so stop mixing it! :)
***The only rice that requires alot of stirring is Risotto*** (but Rice a Roni is NOT risotto...so no stirring!)



It sounds like maybe you didn't brown the rice long enough...it is actually a rice/pasta mixture..Browning the mixture keeps the rice from becoming mushy and sticky. It also adds a pleasant, delicate toasted flavor....

Next time brown it in a non-stick pan...

The only time I've turned out "slimy" rice-a-roni is when I added too much water or didn't cook it long enough. Double check your liquid amounts and cook for the proper time indicated and this should help.

Try a little less water and no oils or butter. Cook it for 3 or 4 minutes less than you normally do. Good luck!
