Question: Help! cooking binge! bran muffins with no milk or buttermilk?
is this possible? can I complete this task?

Answers:

Do you have any cream, sour cream, yogurt or half & half? You could dilute one of those things with water and it should work. If you are purposely going dairy free in them though, I would suggest using a low acid fruit juice like apple juice in place of the milk (or buttermilk) called for. It shouldn't affect the texture much and would give a nice fruity flavor to the muffins.



Use buttermilk. It makes most baked goods taste better than regular milk.
