I'm trying to steam buns but they fall when I take them out of the steamer. What am I doing wrong?!

Question: I'm trying to steam buns but they fall when I take them out of the steamer. What am I doing wrong?
Yesterday I made pork/veggie filled asian style buns and I steamed them for 15 minuets and they turned out fluffy and risen but when I pulled the lid off the steamer, they collapsed.

The "Bread" turned in to more of a skin than a fluffy dumpling.

I'm steaming unfilled dumplings now and I turned the heat off and will let them cool in the pot in hopes that they don't fall... Is that what I did wrong yesterday?

Any advice on Asian Steamed Buns, Polish Steamed Buns, Etc. would be greatly appreciated.

Answers:

The only thing I can think of is...did you remove the lid before you turned off the heat????

Because otherwise it sounds like you did it right..........

Good luck........

Sounds to me like you aren't cooking (steaming) them long enough.
