can you make cookies with normal brown sugar? not soft brown sugar?!


Question: Can you make cookies with normal brown sugar? not soft brown sugar?
I want to make soft chewy cookies, but i only have normal granulated demerara sugar. Will this still work, or should i take time to grind it?

Unbleached sugar has a light brown color to it. Brown sugar that has not been processed completely is brown because it has molasses in it. The molasses makes the cookies soft, the brown sugar I think you are talking about doesn't have molasses, so your cookies will be crisper.You can use this sugar, but you will notice the difference in the cookies texture.



Demarara sugar is not brown sugar, although it is light brown in color. Demarara sugar is more like the sugar crystals you find on top of cookies for decoration.

Brown sugar is soft because it has a high moisture content. Most brown sugar is white sugar with molasses added. You can make your cookies with regular white sugar, substituting a tablespoon or two of molasses for part of the white sugar. Say 1 tablespoon of molasses and 7 tablespoons of white sugar to equal 1/2 cup of brown sugar.



The brown sugar the recipe calls for is actually white sugar with molasses added. It's not the same as demerara sugar. You could try it with your demerara sugar but they might not taste the same. Even if you grind the demerar sugar, it won't be the same.



Yu can try using the sugar you have and adding an egg yolk to your batter. The moisture in the egg yolk will help to replace the moisture not present from lack of brown sugar and help you get a chewy cookie.



you can put a moist paper towel on top of the sugar in a microwave safe bowl and heat at 10 second intervals until soft.
