I have just acquired a mini donut maker, but have no recipe. Who can recommend one please?!
Answers:
Perfect Donuts
3 eggs (around 3/4 of a cup)
1 cup sugar
2 tbsp. soft butter or margarine
3 3/4 cups sifted all purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp salt
3/4 tsp nutmeg/mace (optional)
2/3 cup buttermilk
vegetable oil or shortening (for frying)
**instead of using electric mixer, you can just hand mix according to speed if you do not own one.
1 - large bowl of electric mixer (high speed) beat eggs w/ sugar & butter until very light & fluffy - around 2 mins. you might want to scrape the side of the bowl occasionally.
2 - then, sift flour w/ baking powder & soda, salt and nutmeg (optional); set aside.
3 - low speed gradually beat buttermilk into the egg-sugar mixture.
4 - add flour mixture gradually; beat at low speed until combined & smooth. dough should be soft.
5 - cover in cellophane/saran wrap/plastic wrap and chill for an hour.
6 - remove 1/2 of dough and place on well-floured pastry cloth. (keep rest in fridge) turn over dough & coat w/ flour.
7 - roll it out 1/3 in. thick. cut w/ floured 3 in donut cutter - dip cutter into flour b/w ea. cutting.
8 - w/ wide spatula transfer cut donuts onto top edge of pastry cloth.
9 - press trimmings together; re-roll, and cut. let rest uncovered for 10 mins.
10 - while waiting, preheat skillet or wide saucepan and heat oil to 375° using deep-frying thermometer.
11 - gently drop donuts and/or donut holes 3-4 at a time into the hot oil. (too many will absorb and cool oil, thus making them overly greasy - ew.)
12 - when they rise to the surface, turn them over with a slotted utensil. continue to fry the donuts until golden brown on each side. (3 mins total)
13 - use the same utensil to take the donuts out, and place them in a plate with paper towels lining them to absorb oil.
14 - frost them warm or sprinkle cinnamon or sugar on top.
