Question: How do you make enchilada la paz?
i ate at this mexican restaurant called el ranchero in hagerstown md. i had this enchilada la paz with white cheese sauce and it was amazing. i want to make some at home. anyone know where i can find the recipe and what kind of cheese it was?

CHICKEN ENCHILADAS WITH WHITE SAUCE

2 whole chicken breasts, cooked and shredded
1 lb. Monterey Jack cheese, grated
1 (3 oz.) can (mild) chopped green chilies
2 cans cream of chicken soup
1 pt. sour cream
1/2 lb. Cheddar cheese, grated
1 dozen flour tortillas

Toss together chicken, Jack cheese, and chilies. Mix together soup and sour cream. Heat salad oil in a fry pan over medium heat. Fry each tortilla very quickly on both sides (only to soften). Put about 1/4 cup of chicken filling in center. Add 1 tablespoon soup mixture. Fold sides in, then roll. Place, seam down, in oblong baking dish. Repeat with each tortilla. Spread the remainder of soup over all. Top with Cheddar cheese.Bake at 350°F for about 45 minutes.

White Cheese Sauce This is an awesome Monterey Jack sauce that goes great over chicken enchiladas, or used as a dip for chips or Mexican-style appetizers.

Ingredients

* 1 cup butter
* 3 cups shredded Monterey Jack cheese
* 1 cup sour cream
* 2 (4 ounce) cans diced green chilies, drained

Directions

1. Melt butter in a saucepan over medium heat. Reduce heat to medium-low, and stir in shredded cheese until melted. Mix in sour cream and green chilies, and cook, stirring occasionally just until heated through. Do not allow to boil.

Beef Enchiladas with White Sauce

1 lb hamburger
1 pkt taco seasonings
? onion

Sauce:
2 cans cream of mushroom soup
1 16 oz container sour cream
1 can chopped green chilies
Tortillas
Shredded cheese

Brown meat and onions, add taco seasons and small amount water, cook until heated through. Roll meat and shredded cheese into tortilla shells.
Mix sauce ingredients, place half of sauce on 9x13 baking pan, spread rest on top. Sprinkle with cheese. Bake approx 30 minutes at 350 degrees, until cheese is melted and gooey.
