Potatoes Dauphinoise definitely!!
Very simple, but really, really nice and something my family always does with steak, and it works perfectly!!
Just get about a kilogram or so of good quality potatoes, peel them (not necessary, but each to their own) and slice them into 5mm thick slices. Arrange them flat into a baking dish, occasionally putting over some crushed garlic (use about 3-4 cloves for that amount of potatoes). Continue sacking up all the potato slices and occasionally putting over the garlie. Remember to season well also, then once all of your potatoes have been stacked up, pour on about 500 ml of cream, which is nice with about a teaspoon of mustard powder mixed into it, but again, not necessary.
Then, just chuck it in the oven at 160 - 180 degrees for about an hour and voila!
If it's not something you've done before or have often, I would highly recommend it, it's so easy, always goes down a treat and looks impressive!

Smashed Potatoes............
5 whole Large Red Potatoes
1 stick Butter, Softened And Cut Into Pieces
5 slices Bacon, cooked and crumbled
2 whole Green Onions, Sliced
? cups Sour Cream
Salt To Taste (add Plenty!)
Freshly Ground Black Pepper To Taste (ditto!)
? cups French Fried Onions, More For Topping
Nuke potatoes or bake in the oven until fork-tender. Add to a large bowl and smash with a potato masher. Immediately add softened butter, green onions, bacon, and sour cream and stir with a rubber spatula. Add salt and pepper to taste. Add french fried onions and fold in.
Serve hot, sprinkling on extra french fried onions and green onions. Yummy with grilled steak or chicken....
Potato Bundles...........
6 whole Russet Potatoes
? whole Yellow Onion, Diced
1 stick Butter
? cups Heavy Cream
Kosher Salt To Taste
Paprika To Taste
Freshly Ground Black Pepper, To Taste
2 Tablespoons Minced Parsley
Pile potatoes and onions on a square of foil. Add 2 tablespoons butter. Splash on cream. Then sprinkle on salt, paprika, and black pepper. Sprinkle minced parsley over the top.
Wrap bundles tightly and bake at 375 degrees for 45 minutes, or until extremely tender.
Serve bundles right on the dinner plate......Yum....

Home-Style Scalloped Potatoes

Ingredients
1/3 cup chopped onion
5 tablespoons butter or margarine
5 tablespoons all-purpose flour
1 1/4 teaspoons salt
1/2 teaspoon pepper
5 cups milk
6 cups thinly sliced potatoes

Directions
1.In a large saucepan, saute onion in butter until tender. Stir in flour, salt and pepper until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until sauce is thickened.
2.Place half of potatoes in a greased 3-qt. baking dish. Pour half of sauce over potatoes. Repeat layers. Bake, uncovered, at 350 degrees F for 60-70 minutes or until potatoes are tender and top is lightly browned. Serve immediately

Twice-baked potatoes
The potatoes can be cooked and filled up to 2 hours in advance.
Ingredients
12 small Yukon gold potatoes [about 3 lbs.]
6 large egg yolks
4 tablespoons unsalted butter, softened
1/2 cup heavy cream
1 1/2 cups grated Gruyere cheese
1 tablespoon + 2 teaspoons coarse salt
freshly ground pepper
Method
Preheat oven to 425°. Wrap potatoes in aluminum foil, and bake until softened, about 1 hour. Let cool.
When potatoes are cool enough to handle cut each in half. Scoop out the flesh, reserving the skins, and pass through a ricer, or mash by hand. Stir in egg yolks, butter, cream, 1 cup Gruyere, salt and pepper. Pipe or scoop filling onto reserved skins. Cover with foil and refrigerate until shortly before serving.
Heat oven to 400°
Place filled potatoes on a baking sheet, and sprinkle with remaining Gruyere. Bake until filling is set and tops are golden brown, about 25 minutes.
Serve immediately.

you could make mashed potatoes, put them in pastry bag and use a large tip to pipe them out on a greased baking sheet put them into the oven to golden and serve with the meat and other vegetables, a couple per person will suffice but make a few extras just in case. These can be done ahead of time and at the last minute finish them in the oven.
