How would I cook myself Chiquito style Enchiladas?!?!


Question: How would I cook myself Chiquito style Enchiladas?!?
I loooooooove Chiquito's enchiladas, and i've just found out that i have to cook my family dinner - none other than enchiladas! Normally when my Mum makes it, it's way too cheesy and overcooked; does anyone have a recipe for Chiquito's enchiladas, or another really nice recipe?

Green Chile Chicken Enchiladas
Ingredients:

* 2 cups shredded rotisserie chicken
* 1 1/2cups shredded Mexican or Cheddar cheese, divided
* 1/2cup Hidden Valley? Original Ranch? Dressing
* 1/4cup sour cream
* 2 Tablespoons diced green chiles, rinsed and drained
* 4 (9 to 10-inch) flour tortillas, warmed

Directions:

1. Mix together chicken,3/4 cup cheese, dressing, sour cream and green chiles in a medium bowl.
2. Divide mixture into 4; spoon mixture along center of each tortilla.
3. Roll and place seam-side down in 9-inch baking dish.
4. Top with remaining 3/4cup cheese.
5. Bake at 350°F for 20 minutes or until cheese is melted and lightly browned.
