I have made a meringue for cookies?!


Question: I have made a meringue for cookies?
But I have a lot of meringue leftover and I am out of pans, and out of room in the oven. Will it be alright on the counter until the first batch is done? What can i do to keep it longer if I need to?

I think you could just pop them in the fridge until you are ready for the next batch. I wouldn't store the batter though. Eggs, yeech, very tricky.



Yes, it should be alright until the first batch is done. You may want to whip them quickly before you cook them because they may deflate some while you are waiting.
