Ok here the pasta sauce recipe I always use and its what I'm having for dinner tonight.
5 Medium fresh tomatoes chopped
1 Tin of chopped tomatoes
1 Medium red onion chopped
2 Cloves of garlic crushed
Fresh parsley
Fresh spinach
A small amount of soy sauce and honey
Spaghetti
Sun dried tomatoes
Kidney beans
Caper
2 Table spoons of olive oil (you could also use some of the oil from the Sun dried tomatoes)
Vegetable stock cube
Parmesan
In a large pan put some water on to boil
Add the vegetable stock cube
Once boiling add the spaghetti
Taste the pasted after about 10 mins to see if cooked
When cooked drain and mix in some butter
In another pan put the olive oil at a medium heat then add the onions
Add a teaspoon of soy sauce and a teaspoon of honey
Stir until soft and caramelized
Add the garlic once mixed with the onions put in the fresh tomatoes
Allow the tomatoes to soften until the skins start to peel away
At this point add the chopped tinned tomatoes and the kidney beans (you may not need to use the whole tin)
At this point I always add some dried herbs and spice I normally use paprika oragano and a general herb mix
Allow to reduce
Once almost done add the chopped cappers (squeeze them off so they aren't too vigery) the parsley, which you can just rip apart as you add it and a handful of spinach
Sever with parmesan cheese
You main course is complete
For a side if you want a salad I would suggest buying a mix leaf one you can then you can any remaining spinach, I would also suggest you add a few cappers tomatoes and cucumber. If you want to make you own salad dressing mix olive Oli and vinegar at a ration of 2:1 (so for every 2 spoons of olive Oli add 1 of vinegar.
in my local supermarket they sell bread mix (its the same place as the flour) so all you need to do is add water. So if you want to make your own bread I would def recommend something like that but if not just buy some nice crunchy fresh bread
Hope that helps and good luck I'm sure he'll love it =D
Start your dinner with a salad of soft lettuce leaves dressed lightly with his (or yours) favorite dressing. Add some croutons for a contrast in texture
Then serve Spaghetti alla Puttanesca
Here's how
Ingredients
1 lb. spaghettini, cooked al dente
3 ounces extra virgin olive oil
3 ounces pitted Ni?oise or Gaeta olives
1 pound plum tomatoes
3 anchovies
1 clove of garlic, crushed
Crushed red pepper flakes
1 1/2 ounce capers, drained
Kosher salt
Method
Chop the anchovies. Peel the tomatoes, dispense with the seeds and cut into small chunks. Pour the oil in a warmed skillet and add the garlic and crushed red pepper flakes, cut into small pieces. Cover. Cook over medium heat until the garlic browns.
Remove garlic and add the anchovies. Add tomatoes, olives and capers. Stir and let cook for about 7 minutes. Taste the sauce for seasoning. Pour the sauce over spaghetti in a skillet with the sauce, toss well and serve
Serve the pasta with Texas toast. You can find boxes in the freezer section of the supermarket, some with cheese, some with garlic, some with both
As far as music, play the music you both love
Lighting will be key. Keep light fixtures low and light some candles ... and keep scented candles off the dining space
Congrats! Relax! And Have fun!
My secret ingredient is Fresh Basil
Simmering for a good 40min or more once all the ingredients are mixed in, helps tenderize the meat
Salad is execellent served with spaghetti, as is sliced garlic bread or dinner rolls brushed with a light garlic & butter mixture.
This isn't fancy, but this is sooo good!
Cook your spaghetti as directed on package.
Sauce:
Can or small jar of sauce
Roma tomatoes X 2-3, diced
Mushrooms (button) X 1 cup
Green pepper, sliced into small bite size pieces X 1/2 cup
Black Olives X 1/4 cup, diced
Carrots, diced small, X 1/4 cup
Onion, diced, X 1/4 cup
Ground beef X 1/2 pound
Ground sausage X 1/2 pound
Pepperoni, chopped into small pieces X 1/2 cup
Provolone or Mozzarella Cheese, X 1/4-1/2 cup
Fresh Parmesan cheese, X 1/4 cup + a little to spinkle later!
Meatballs:
1/2 pound ground beef
1/2 pound ground sausage
Onion, diced, 1/4 cup
Cheese (mozarella, or your choice!), shredded X 1/4 cup
Bread crumbs, Italian preferably, X 1/4 cup
2 eggs
Fresh garlic, diced/ground
For sauce:
Medium heat
Saute carrot, green pepper in a little olive oil, or margarine in a large sauce pan.
After a minute or so, add the mushroom & black olives
Then, add the Roma tomatoes, after about 1 minute, add the can/jar sauce.
After a minute or two, reduce heat to low.
Let simmer on low heat for 5 min or so, while preparing the meat.
Next, in a sepate fry pan, add olive oil/butter & onion..
Then, add ground beef & sausage, cook until nicely browned.
Now, add the pepperoni!
Now you are ready to add the the meat mixture to the sauce mix!
Add the cheese, and stir while it melts into the sauce.
Let the sauce simmer on low heat.
Meatballs:
In a large mixing bowl, combine ground beef & sausage, diced onion, bread crumbs & cheese. Add to eggs, lightly beaten. If you are adding fresh garlic, add it now. With a wooden spoon, mix all ingredients until blended well. Form meat balls, and roll in any extra bread crumbs for an extra crunch.
Warm olive oil in a fry pan, over medium heat
Add meatballs, and cook until nicely browned, moving them around frequently, so they cook evenly.
Place desired amount of spaghetti on each plate, add 3 meatball to the center, then top with sauce. Sprinkle a little fresh parmesan on top, and a light sprinkle of parsely, if you have it!
A good salad to go with spaghetti is a nice blend of salad greens (romaine, spinach, leaf lettuce), mushrooms, carrots, any other favorite veggies and your favorite dressing!
Enjoy your dinner! :)
