3 minutes in simmering water to which you should have added a bit of salt and a couple of drops of vinegar or wine - these help to keep the whites firm and from spreading.

While I have seen times from 2 min all the way to 6 min, mine always turn out best between 4-6 min.

Make sure your water is simmering not boiling before you add your egg.

No set period of time, pull it out the water after about a minute and a half and have a feel. If the whites are hard, and the area where the yolk is is still bouncy, it is done.



I depends how fresh they are but I'd go for about four minutes but to be honest , getting a poached egg right is so tricky I generally don't bother and fry or boil them .
