What are some baking recipes I can use my crystallised ginger for?!


Question: What are some baking recipes I can use my crystallised ginger for?
I bought a bag of it and the ginger is a little too strong to eat plain. What are some simple recipes I can add it in? (Not ginger snaps). Any help is appreciated!

Here's a few suggestions of how you can mince up the crystallized ginger and add to:

-Basic sugar cookies
-Cupcakes (some minced ginger inside the cupcake mix) an one small pc. on top of the frosting.
-I think a few pcs. would compliment a Lemon Chess Pie or atop Lemon Tarts (filled with Lemon curd)

You can use crytallised ginger to make a refreshing cold tea. Just add 2 tablespoons of Ginger to 1 pint of water and a lemon twist. Let sit for 24 hours and then add 1 part apple juice and 1 part orange juice. One of the best things I've ever drank.
