Question: Could you help me with a chicken and plum recipe?
I have a whole bunch of fresh plums (about 1kg), and at least half a kg of chicken thighs. Most of the recipes I'm finding use plum sauce or similar.


Do you know a recipe where I could maybe bake them like apricot chicken, or some sort of stir-fry? I have a spicy plum chicken recipe open, but I don't have many spices apart from some mixed Italian herbs, chilli and a general curry mix.


I'd ask for a recipe that would also let me include my garlic-infused feta, but I think that's pushing it and I can use that somewhere else.

You need to break the plums down to a jam like consistency.
Roughly chop the plums after removing the pit and place in a sauce pan on the stove. Add about the equivalent of sugar to the plums 1 part sugar to 2 parts plums. Allow the fruit and sugar to break down on medium heat for about 20 minutes till it is fairly thick but not pasty or runny. Stir often.
At this point you can add a few pinches of salt, cinnamon or allspice but it doesn't sound like you have the last 2. I would mix a few teaspoons of curry powder with the jam - but taste between spoonfuls before adding too much depending on how strong your curry is.
I would take the chicken - cut up if whole - or parts and lay in a baking pan. Spoon/brush the plum/curry mixture over the parts and bake at 350 degrees for about 30-45 minutes. Check for doneness by pricking a fat part of the chicken and make sure the juices run clear.
