Gary, there are litterly hundreds of items you can use to make Tortilla Pinwheels.
From turkey, ham, chicken, pork, cheese, pate, almost anything you are able to roll in the flour tortilla! You can spread it with mayo-chipotle sauce and salsa to get the best flavor. Here's one simple recipe for one.
Ingredients
* 2 tablespoons shredded cheddar cheese
* 2 tablespoons cream cheese, softened
* 2 tablespoons sour cream
* 1 tablespoon chopped green onion
* 2 teaspoons chopped green chilies, drained
* 2 teaspoons chopped ripe olives
* Dash garlic powder
* 1 flour tortilla (8 inches)
* 1/4 cup salsa
Directions
* IN a bowl, combine the first seven ingredients until blended. Spread over tortilla. Roll up; wrap in plastic wrap. Refrigerate for 2-3 hours or until firm. Cut into 1-in. slices. Serve with salsa.

Tortilla pinwheels
I’ve put my spin on this venerable favorite. They certainly aren’t typical but they are delicious
Plan ahead, the rolls need to be refrigerated overnight before slicing and presenting.
Ingredients:
8 ounces vegetable Neufchatel
2 Tbs real mayonnaise (Hellmann’s recommended)
2 Tbs horseradish
Six 6-inch flour tortillas
1 pound hickory-smoked bacon, cooked until crispy and crumbled
1/2 pound uber-curly leaf spinach, washed, stemmed and julienned
4 to 6 plum tomatoes, seeded and sliced
Directions:
In a mixing bowl, combine Neufchatel, mustard, and horseradish. Spread an equal amount of mixture onto one side of each tortilla. Top each tortilla with equal amounts of spinach, tomato, and bacon. Roll up tightly. Wrap each tortilla individually with plastic wrap and refrigerate overnight.
For service, slice into 1" wide pinwheels.

1 (8 ounce) package whipped cream cheese
10 (10 inch) flour tortillas
1/2 cup green onions, chopped
1/4 cup black olives, chopped (optional)
3/4 cup chopped ham slices

1.Spread whipped cream cheese spread evenly on tortillas. Sprinkle the green onions, black olives and chopped ham slices evenly between all ten of the tortillas. Roll tortillas up jellyroll style. Cover with plastic wrap and refrigerate for 2 hours.
2.Remove from refrigerator and slice at 3/4 inch intervals. Arrange on tray and serve.

8 oz. dairy sour cream
1 pkg. (8 oz.) cream cheese, softened
1 can (4 oz.) diced green chilies, well drained
1 can (4 oz.) chopped black olives, well drained
1 c. grated Cheddar cheese
1/2 c. chopped green onion
5 (10 inch) flour tortillas
Salsa
Mix all of the ingredients together thoroughly. Divide the filling and spread evenly over the tortillas; roll up tortillas. Cover tightly with plastic wrap, twisting ends; refrigerate for several hours.
Unwrap; cut in slices 1/2 to 3/4 inch thick. Discard ends. Lay pinwheels flat on glass serving plate. Leave space in center of plate for small bowl of salsa if desired.
I would imagine it involves spreading a tortilla with whatever topping you intend to use, rolling it up and then slicing it up, so you are left with circular 'pinwheels'
(make sure you top it, like you top say... toast, rather than fill it - and then roll it up quite tight, so you end up with the swirly pattern of the tortilla and filling)

1/2 c. chopped green onion
5 (10 oz.) flour tortilla
8 oz. cream cheese
1 c. grated Cheddar cheese
1 (4 oz.) can chopped black olives
Mix all filling ingredients together, divide evenly and spread over tortillas, roll up, cover tightly with plastic wrap.
Refrigerate until ready to serve
it's just a tortilla with cream cheese, ham, perhaps olives, lettuce rolled and then cut into rounds.
