Fettuccine Alfredo
Ingredients
8 ounces dried fettuccine
2 tablespoons butter
1 cup whipping cream or milk
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan cheese
Grated or finely shredded Parmesan cheese (optional)
Directions
1. Cook fettuccine according to package directions.
2. Meanwhile, in a large saucepan melt butter. Add cream, salt, and pepper. Bring to boiling. Reduce heat and boil gently for 3 to 5 minutes or until mixture begins to thicken. Remove from heat and stir in 1/2 cup grated Parmesan cheese. Drain pasta. Add pasta to hot sauce. Toss to combine. Transfer to warm serving dish. Serve immediately. If desired, sprinkle with additional Parmesan cheese, Makes 4
Roast Leg of Goat with Blue Cheese, Herb Salad, Hazelnuts and Green Kale:
2 tbsp Cider vinegar
Sea salt and freshly ground black pepper
1/2 lb Mild blue cheese, for example, Danish Blue
1 Whole leg Goat, divided into four separate portions
4 oz Roasted hazelnuts
1/2 cup Cold pressed rapeseed oil, for dressing and frying
A few ha Mixed salad; chicory, mustard greens or curly endive
Herbs for the salad: Italian parsley, dill or wild herbs such as ground elder or sage
3 tbsp Kale juice, from about 4 oz of fresh kale
Heat up a large skillet or frying pan to a medium heat. Split the larger portions of meat, removing the fat and sinews. Season the pieces with salt and pepper and fry them for 3-4 minutes on each of the four ”sides”. Take the pan off the heat and let the meat rest, covered in the pan for 5 minutes while you make the salad.
Chop or crush the hazelnuts lightly and mix them with the washed and drained salad and herbs. Make a dressing with 3-4 tbsp of rapeseed oil, the kale juice, cider vinegar and season with salt and pepper.
Divide the salad on cold or warm plates, crumble the blue cheese over them and drizzle with the dressing. Slice the meat thinly at an angle and divide the slices on top of the salad.
Drizzle with a little more dressing and serve.

Chicken thighs stuffed with prosciutto, gruyere and sage
Ingredients
Nonstick cooking spray, oil or butter
6 boneless, skinless chicken thighs
freshly ground black pepper
6 half-inch thick sticks of Swiss Gruyère cheese
3 slices air-cured salted ham [Serrano or Prosciutto], cut in half, or an equivalent amount of country ham
3 fresh sage leaves, halved
coarse salt
1/3 cup freshly grated Parmesan cheese
1/3 cup dried breadcrumbs [not fresh]
2 tablespoons unsalted butter, cut into 6 pats
Method
Heat oven to 350°
Spray, oil or butter a baking dish large enough to hold the 6 thighs snugly.
Wash the thighs in cool water, then pat them dry with paper towels. Lay each thigh flat on a cutting board, sprinkle with pepper, and put a stick of cheese, half a slice of ham, and half of a sage leaf in the center of each thigh. Roll the thigh meat around the filling. Place the little parcels seam side down in the baking dish. Sprinkle the tops with salt, pepper, Parmesan and lastly the breadcrumbs. Top each with a pat of butter.
Bake for 25 to 30 minutes, switch the oven to “broil” for the last few minutes if you desire to brown the tops.
Easy chicken enchilada casserole
white meat chicken stredded
1 large can el paso green enchilada sauce
1/2 cup sour cream
3 cups shredded monterey jack cheese
1 packet corn tortillas, quartered
In a large bowl, mix together the green enchilada sauce and sour cream (use a whisk to really incorporate it)
Pour 1/3 of the sauce over the chicken in another bowl and mix well
In a backing dish, layer 1/3 of the tortillas, then the chicken mix, then a little sauce, then 1/3 of the cheese. Repeat... top with last of tortillas and cover with remaining sauce (you don't need to use all the sauce, just enough to cover) and remaining cheese. Bake at 350 uncovered for an hour. Remove from oven and let sit for 15 minutes until set. Cut in squares with a knife and serve. Yum!

fry hambuger then mix in cake pan along with cream of chickan and corn salt and pepper (opitanal)
then put tator tots on top put in pre heated oven at 350 degress for 1 hour
Stuffed Cabbage Very unique taste and with some yogurt garlic sauce it is delicious.
