Question: Is is ok to defrost thaw meat and freeze it again in order to cut it into small pieces?
I want to buy a big chunk of frozen lamb and cut it into small pieces.
what do you think?

Contrary to popular opinion, it is perfectly safe to thaw and refreeze meat, if it is handled properly while it is thawing. You do NOT have to cook it before refreezing.

"Once food is thawed in the refrigerator, it is safe to refreeze it without cooking, although there may be a loss of quality due to the moisture lost through defrosting. After cooking raw foods which were previously frozen, it is safe to freeze the cooked foods. If previously cooked foods are thawed in the refrigerator, you may refreeze the unused portion.
"If you purchase previously frozen meat, poultry or fish at a retail store, you can refreeze if it has been handled properly." - USDA

It is not OK to thaw meat and refreeze it.
Meat should be cut when brought home , so bring it home and wrap it and size it as you want and then freeze it for safe keeping until needed to cook.
You can remove meat from the freezer , thaw it , cook it, then freeze it , but cooking it has changed its form from raw to cooked, and then freezing is allowed.



You have a couple of choices for food safety.
1) Get the butcher to cut & wrap pieces separately; but they may charge more.
2) Thaw gently making sure ice crystals are retained, cut quickly & freeze.
3) Get a butcher's saw & cut the meat & bones frozen, then re-wrap.



as said you cannot defrost meat and refreeze it. I gets frost burn and tastes gross you can get a sharp knife and cut it frozen or have the deli cut it and package it separately for you too.



If you are buying frozen lamb, and cutting it into pieces, at what point are you REfreezing it?



You can't freeze it again.



i do it all the time, just make sure you seal it super good to avoid freezer burn.
