Roasted vegetables do you think they are suitable to go with a fish dish?!


Question: Roasted vegetables do you think they are suitable to go with a fish dish?
I am trying to get my husband to eat more fish dishes as he eats far too much red meat. I am trying to vary the vegetables that go with the fish but I think he is bored with just the normal steamed veg. I've had roasted veg with meat dishes but just wondered what people thought about doing roasted veg with fish. I am doing Skate wings in a tomato and garlic sauce!

In Italy we also have roasted vegetables with fish! Or very often. I love it and you must keep in mind that the vegetables shouldn't cover the fish' taste. I mean, simply roasted eggplant, zucchini and tomatoes - vegetables that have simple flavors. I wouldn't suggest onions or bell peppers with fish..

Many times when I cook fish, I serve a mixture of broccoli, cauliflower, carrots and zucchini or yellow squash (cut on an angle for visual appeal) sauteed in olive oil with a touch of garlic. You can also add a little red pepper and onion if you like. It's light and healthy.



Yeah why not? I mean cooking is about experimenting if it doesn't work first time you try a different way next time. Fried veg with fish is nice though I find but were not all the same just try it XD



You feel like if it's poached vegetables then it's be more suitable for the dish? In my opinion it's all great when it comes to VEGS ;-)



Roasted vegetables is great for fish. Both are low fat and healthy.



Sounds good roasted veg go with most fish
