I find that lemon cake goes down really well, we often make mixed tier wedding cakes, and find that many brides go for a layer in lemon sponge. The whole cake is then iced in white or ivory (fondant) sugarpaste, and it tastes great! You can make a very quick basic buttercream filling - double the amount of icing sugar to butter, and add a tiny amount of lemon flavouring / essence. We also find it helps to add a tiny amount of yellow colour, it just helps with recognising it's not a plain cake. (e.g. like coloured battenberg!)

First, I hate the taste of fondant so whenever I have a cake from fondant, I don't eat the fondant. I LOVE ICING THOUGH.
Second, a sponge cake may NOT stand up to the weight of fondant and could collapse.
