Question: Does anyone know the secret of traditonal pie and mash eastend style. and how you make the liquor sauce?
Answers:

The liquor is the water eels have been stewed in, boiled down and sweetened with parsley. What goes in the pies is a secret known only to the cook and Sweeny Todd.



I believe the original filling was minced lamb and the parsley liquor made with the eel water and thickened with some of the potato water that came with the mash served with it.The best pie,mash and liquor was from Manzies ,it makes my mouth water just thinking about it!
