You want the oil to be about 185 degrees C (365F).
The smoke point of vegetable oil is 182C, so you're better off using a different oil

Sunflower oil or groundnut/peanut oil would be my choice, where the smoke point is not until 230C



Tee one time I was in Ottawa for Winterfest most use either a vegetable oil or a solid shortening like the one used for french fries, they buy it from the wholesale suppliers, the dough itself is a simple sweet yeast dough rolled out to the shape of a beaver tail, I like the cinnamon sugar one, I worked for CP Hotels in the 1980's and was at the Fairmont Chateau Laurier for a special dinner during the fest, we made them to but did an upscale plate presentation.



How about vegetable oil?
