How long can home-made whipped butter keep after washing?!
I read that home-made whipped butter needs to be washed if it is not consumed within 24 hours, so that it may keep longer.
Three questions:
1. After washing the butter, does the act of pressing out the excess water with a spoon compress the butter and cause it to be less "whippped"?
2. How long can whipped butter keep after it has been washed?
3. Does the addition of flavours affect how long home-made whipped butter can be kept?

Answers:
In almost 50 years of catering I have never washed butter whipped or otherwise. The second part of your question about flavours is that they have little or no effect on how long it can be kept. Like most foodstuffs it is better consumed fresh than kept but would keep in a refrigerator for a couple of weeks.
