Top sirloin is a small, boneless steak..... It's got good flavor, but it's a bit tougher than other steaks so you might want to marinate before cooking it. .............

New York strip steak....Think of these as Porterhouse or T-bone steaks that have been stripped of the choice tenderloin portion. They're flavorful and fairly expensive cuts....

It really is all about personal taste...and of course expense...

Personally I like Porterhouse...But a Ribeye has great flavor and a lot cheaper...

The New York is more heavily marbled, and tenderer. For grilling, broiling, or pan frying, that's the best one. It does cost more, though. For a long cooked dish, the leaner, cheaper sirloin works fine.



Try a T-bone (called a Porterhouse when the beef is prime). It has a New York strip steak on one side and a filet on the other side. Best of both worlds and quite filling.



I'd have to go with a flatiron steak as the best I've ever eaten.



Neither, I prefer a filet.
