Well typically the longer you bake the cookies the more crunchier they become,
for soft cookies, don't bake them as long.

Crunchy cookies use more butter than shortening, to make it simple.

Flour, eggs, butter, sugar, brown sugar, ect.
They get crunchy as they're left out
