how do i boil the perfect eggs?!


Question: How do i boil the perfect eggs?
what is the perfect way to boil an egg.....i have it down so that there is no black around the yellow......but i have a hard time peeling them......the shell always sticks and pulls away some of the white!!....Thanks!

Put cold eggs in cold, salted water to cover the eggs plus one inch, and bring to a boil uncovered over medium heat. Turn off the heat as soon as they boil, cover, and let sit for 10 minutes. Drain and then rinse in cold water to cool them off. If you're high altitude, you may need to go 11 or 12 minutes; I break one open at the 10 minute mark to see it the yolk is perfectly done or if the others need another minute. When you drain and rinse them and drain the cold water off, shake them lightly in the pan to help crack the shells a bit, then refill the pan with cold water. Peeling them under water or under running water helps some. Older eggs peel easier, but fresh eggs taste best. The older the egg, the more the whites have evaporated through the porous shell, so the bigger the hollow at the end of the egg and the more air between the shell and the egg when it's boiled. You can tell if eggs are very fresh or older by seeing if they sink to the bottom of the pan of water, or float. Older ones float. I usually cook a few extras in case one of them just won't come clean out of the shell.
EDIT: I forgot to tell you to lightly roll the egg under your palm on a flat hard surface to crackle up the whole shell; sometimes that helps loosen it more evenly than picking at it with your fingers. If they're really stuck, you can run a small spoon under the shell from the wide end of the egg after you've started the shelling.



In order to peel the shells easily, put the eggs in cold water immediately after you boil them.

By the way, although you have already solved this problem, the grey layer around the egg yolk is due to over cooking.

Most of the people say cook eggs from cold water, but it is not really necessary. The sole purpose of that is to make sure the shells not to crack. If you put room temperature eggs in boiling water, they usually turn out alright. Also, by putting them directly in the boiling water, it's much easier to time when the eggs are done. Approximately 5 mins for the white to be cooked. Another 5 mins will cook the egg yolk completely. I usually cook eggs for 7 mins or so.

Brings eggs to a boil....get a good rolling boil and remove from heat and cover for 12 minutes exactly...have a bowl of water and ice handy after 12 minutes add eggs to the ice water and set for 5 minutes...tap bottom of egg and roll around to loosen the shell..Perfect eggs...

How to make hard "boiled" eggs:

Do NOT boil!, Simmer instead.
Put a pinch of salt into the simmering water. Carefully lower in the eggs. Simmer uncovered for about 12-15 minutes. Put the eggs immediately into an ice bath. Wait a few minutes. Peel the eggs.



You put in hot boiling water... then after 5 minutes... you take them out. you should wait at least 10 minutes for the eggs to dry... then peel (:

the fresher the eggs are the tougher they are to peel. use eggs that have been in the fridge for at least a few days



Put eggs in a pot of water. Heat to boiling, then turn heat off and remove eggs to cool down. This process should help with the peeling problem.
