I would make Fish and Chips and use the salsa as a dip

Make a Pavlova ans decorate with strawberries



I have a very similar recipe that I put on a bed of rice pilaf

1 Cup Rice
2 Cups Chicken Stock
Small onion - small dice
1 bay leaf
1 Tbs oil
pepper and salt (if needed because the chicken stock should have enough sodium)

Pre-heat oven to 375
Heat a sauce pan to medium, add oil and onion and sweat until translucent - 5-7 minutes
add rice and cook for 1 minute stirring constantly
add the stock and bay leaf (pepper)- bring to a boil, cover and put in the oven for 20 minutes.
Remove from oven and fluff with a fork - plate a bed of rice and then put your talapia on top and cover with the mango salsa.

for tilapia, i would go with brocoli and a sweet potato or yam. for dessert, if you are looking for something light you could do angel food cake with strawberries and whip cream, or a trifle. trifle is my favorite, you just use angel food, vanilla pudding, blueberries and strawberries (and whatever else berry/fruit you wish) and whip cream and layer it. or you could do chocolate covered strawberries, vanilla ice cream with strawberries, or just have fruit and yogurt parfait

I make an awesome simple cilantro rice with corn...Here is what you need:

1 cup of long grain rice
2 cups of water
1/2 cup of chopped cilantro
1 cup of frozen corn
1 TBS of Chicken Bullion
2 fresh crushed garlic cloves

Slightly toast rice and garlic in alittle EVOO; about 5min stirring it frequently. Add water, cilantro, corn, and bullion. Bring to a vigorous boil. Reduce heat to simmer and cover. LEAVE IT ALONE...it will take about 20min for rice to be nice and fluffy.

For dessert I have a perfect one. It'll take only 15min to make. You will need:
2 Tbsp. butter
1/3 cup firmly packed light brown sugar
1/3 cup Sour Cream
2 medium bananas, peeled
1/2 cup Roasted Peanuts
1 square BAKER'S Semi-Sweet Chocolate, melted
1/2 cup thawed Whipped Topping, divided

So melt butter in large skillet on medium heat. Add sugar; cook until melted, stirring occasionally. Reduce heat to low. Gradually add sour cream; cook 1 min. Slice bananas in half lengthwise and add them and the peanuts to skillet. Cook 1 min. or until bananas are evenly coated and tender, basting occasionally with sauce. Spoon bananas evenly into 4 dessert dishes; top with remaining sauce in skillet. Drizzle chocolate on top of bananas. Top each evenly with whipped topping.

That has a lot of flavor- I'd go with rice or orzo with just a little butter and a veggie like asparagus or snap peas.

Caribbean Sweet Potato Salad

Ingredients
1 large russet potato, peeled and quartered
1 large sweet potato, peeled and quartered
1 cup corn
1 teaspoon prepared Dijon-style mustard (more)
2 tablespoons fresh lime juice (more)
3 tablespoons chopped fresh cilantro
1 clove garlic, minced
3 tablespoons canola oil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 cucumber, halved lengthwise and chopped
1/2 red onion, thinly sliced
1/4 cup finely chopped peanuts

Directions
Place the Russet potato pieces into a large saucepan, and cover with salted water. Bring to a boil, turn the heat down, and simmer for 10 minutes. Add the sweet potato, and cook about 15 minutes more. Remove a piece of each potato, and cut it in half to see if it is cooked enough. Once the potatoes are tender, add corn kernels; cook another 30 seconds. Drain through a colander. Fill the saucepan with cold water, and drop vegetables into water. Cool for 5 minutes, and drain.

I would make Basimati (sp?) rice and grill some yellow squash and zucchini. For vegetables: cut in half long ways, brush with some olive oil, salt & pepper, garlic and red chili flakes. For desert you can make strawberry short cake or to make it easy just heat up some chocolate to dip them in.



Personally, I would skip the mango salsa.

I would make Mac and Cheese, Mashed Potates, or Broccoli with cheese sauce.



Rice and asparagus.

Angle food cake with strawberries and fresg whipped cream



A tabouleh salad might be nice.



my side would be black beans and rice. Maybe a fruit salad for dessert.
