All kinds of cupcakes for them to sample what you can really do:
Chocolate with white chocolate or vanilla frosting.
Dark chocolate with milk chocolate.
Chocolate lava cupcakes.
Carrot cake or pumpkin with cream cheese.
Apple cinnamon swirl.
Blueberry or butter brickle with cream cheese.
Cherry with vanilla.

Go as nuts as you want with rainbow-colored cakes and icings.
Be as decorative with the toppings as possible: tiny dabs in many colors or several shades of one color.
Checkerboards, stars, cloverleaf, smileys, jack-o-lanterns, etc.

Study wedding cake designs to get ideas on how you want to decorate full-size cakes. And don't forget that pies and cheesecakes need decorating, too.

(Definitely tell them in signs and advertisements that you will make anything they want special order.)

Ok have you ever considered cheesecake? Thats always good and sells fast! Also red vevlet anything! cookie cakes!!!!! Thats the best one. haha. Um oreo cream cheese balls. DELICIOUS! With white chocolate drizzled over. Hope it helped
