You'll have to price things according to what it costs you and get 10% back /item. Low overhead will cut down on costs.
Do like 3 cake flavors/month and then change each month. That will allow what works/tastes follow suit by sales and comments from customers. Work these with holidays etc too. EX: Christmas--Chocolate cake with peppermints and green mint frosting. White cake with peppermint patties, choc. frosting. Red Velvet cake. 4th of July cake with red strawberries and blue berries. Easter--Lemon cake, carrot spice, rainbow cake--white cake w/ jello in it and top with whip cream. Peanutbutter cake, strawberry cake, milkyway cake, peach cake, key lime cake.
Icings: Do the basic crisco and a butter. Simple.
Cakes---$7-8.00 tops and cupcakes (6)@$7.00.
Ordered sheet cakes for special things...higher at $15.00. Try to say under the grocery store bakeries.
Make birthday cakes and wedding cakes! I hate icing; use home-made frosting but use icing to decorate. I'm sure you can easily find good recipes online. In terms of prices, set them about average but have a big opening sale to lure people in when you first open the bakery. Always have small free samples to tempt people to buy more. If you can, personalize cakes by appointment and charge extra! Cake flavors: CHOCOLATE, vanilla, ice-cream cake, red velvet cake, cute character cupcakes and cakes for little kids, cannoli cake, strawberry cake, devils' food cake, cupcakes with filling, cakes with filling, etc Icings: yuck i hate icing but it can really beautify a cake so find all the pretty colors you will need for decoration
