Don't bake them quite as long, they are hardening as they cool. Also, make sure you store them in an airtight container. I've heard that putting a slice of apple in the container will keep them moist.
Okay if your cookies are getting hard and you want them soft make sure you...when you take the cookies out of the oven they should be lightly brown and look a little doughy still...leave the cookies on the cookie sheet or whatever you cooked them on. Don't touch them for about 15 to 20 minutes.
This should help keep them soft and keeping them in a air tight container.
Also use more brown sugar than white.

1. Use more brown sugar than white
2. Store them in an air tight container
3. stick a slice of bread in the container--the cookies will sap up the moisture from the bread.
this is a bit weird but you can out water on them and microwave for a few secs i do this with pita breads and boscuits if they go a bit hard lol
dont bake them so long. undercook them, they will continue to cook fora minute when you take them out. And over mixing is a common mistake when baking.
no cookied do that naturally wut u can do to make them soft again is heat them up in the microwave or freeze them is what we do and usually keeps them fresh (:
I store mine in an air-tight container and they are soft for literally MONTHS later!
