can I part roast a beef joint, then finish it off later?!

Question: Can I part roast a beef joint, then finish it off later?
Im cooking a beef roast on Sunday, its just over 2 kilo's so will take a while.

I want to cook it at my house, and then hopefully take it to my parents to finish it off in the oven
They only live 10 minutes away, but will it become dry if I let it cool slightly, then finish off roasting it later?

Answers:

I would recommend fully cooking it to your desired degree of doneness, then taking it to your parents house fully cooked. If they only live 10 minutes away, then it will have adequate time to rest before carving so you don't serve a dry roast.

Also, before you go, you can spoon up the drippings into a measuring cup or jar to make the gravy from (and avoid the risk of them sloshing out of the pan in your car).
