Grilled Chicken With Saffron

1 Place the saffron in a medium-size bowl and crush to a powder with a pestle or the end of a wooden spoon. Stir in the warm water and let stand for 5 minutes, then stir in the yogurt, onion, lemon juice, salt and pepper.
2 Rinse off chicken pieces under cold running water, then drain and blot dry on paper towels. Place chicken in large nonreactive bowl or re-sealable bag and pour the marinade over them, turning the pieces to coat thoroughly. Cover and let marinate, in the refrigerator, for 24 hours, turning the pieces occasionally.
3 Preheat the grill, medium in one are and high heat in another area.
4 Prepare the basting mixture. Place saffron in a medium bowl and crush it again to a powder. Stir in lemon juice and let sit for 5 minutes. Melt the butter in a small saucepan on low heat, then remove from heat and stir in saffron mixture.
5 Place chicken pieces on oiled grate, skin side down, on high heat and allow to brown for several minutes and then move them to med/low heat for several minutes. Now flip chicken pieces over and place on high heat til browned and again move over to the low heat to cook through. Baste pieces a couple of times during grilling. Be careful to watch for flareups and don't burn them. Season with salt and pepper.

sweet potato (YAM) and sausage soup




This hearty soup gets rich flavor from lingui?a, a delicious pork sausage from
Portugal seasoned with garlic, paprika, and other spices. Spanish chorizo
sausage is a great substitute.
Ingredients
3 tablespoons extra-virgin olive oil, divided
1 10- to 11-ounce fully cooked smoked Portuguese lingui?a sausage or chorizo
sausage, cut crosswise into 1/4-inch-thick slices
2 medium onions, chopped
2 large garlic cloves, minced
2 pounds sweet potatoes (yams; about 2 large), peeled, , cut into 1" pieces
6 cups low-salt chicken broth
1 9-ounce bag fresh spinach
Preparation
Heat 2 tablespoons oil in heavy large pot over medium-high heat. Add sausage;
cook until brown, stirring often, about 8 minutes. Transfer sausage to paper
towels to drain. Add onions and garlic to pot and cook until translucent,
stirring often, about 5 minutes. Add potatoes and cook until beginning to
soften, stirring often, about 12 minutes. Add broth; bring to boil, scraping up
browned bits. Reduce heat to medium-low, cover, and simmer until potatoes are
soft, stirring occasionally, about 20 minutes. Using potato masher, mash some of
potatoes in pot. Add browned sausage to soup. Stir in spinach and simmer just
until wilted, about 5 minutes. Stir in remaining 1 tablespoon oil. Season with
salt and pepper.



Hi there,

Right my first dish for you is called SWEET PEPPER STUFFING my partner loves this little light dish and its easy to make. Serves 2 people
YOU NEED:
Small bowl of grated cheese
2 Red peppers ( can be any colour pepper)
Savoury Rice
Salad leaves
Cucumber etc

PREPARATION
Preheat oven to 180

METHOD
Cook the rice (your desired flavour)
Carefully cut round the top of the peppers around the stork and remove the top. This will act as a lid later on.
Scoop out the inside of the peppers removing the tiny seeds.
Sprinkle some grated cheese into the pepper.
Then with a teaspoon add some rice into the pepper until its almost filled up to the top. Add a little more cheese on the top.
Replace the pepper lid so it fits nicely back on top.
Wrap the peppers separately in foil and place standing upright onto a baking tray and put on middle shelf. Allow to cook for approx 15 mintues.

While peppers are cooking prepare plate with decoration of salad.
OPTIONAL you can add new boiled potatoes or use remaining rice.

TO SERVE
Remove peppers from oven and carefully unwrap foil BECAREFUL as they will be very hot.
Remove lid to peppers and carefully with a sharp knife cut the pepper in half. Place of dish.

This
Serve straight away.
