Answers:

All mustard is made from grinding mustard seeds and combining the paste with vinegar and seasonings. In the case of coarse-ground mustard, only half of the seeds are ground to a paste and the rest of the seeds left whole. You can buy coarse ground mustard everywhere you find the typical smooth mustard, whether yellow or Dijon-style



It's mustard with some of the seeds left whole, sometimes it's called grainy mustard. You should be able to get it in most supermarkets alongside the other table sauces. It tastes a lot like ordinary mustard but usually not quite so fiery and of course it has more texture. You could substitute ordinary mustard if you can't get hold of any.



Brisket, the substitute for coarse mustard, you can use the likes of Dijon or normal yellow mustard. I would NOT suggest Old English.
